How is this different from hiring developers to build our product?

Two differences. We deliver a launched product rather than staffed hours, so scope and timeline are our problem, not yours. Fixes are written and reviewed by engineers before anything reaches production. The saving is in the sorting, not in unattended code changes.

How quickly can we actually launch?

Scoping takes about a week, and a first release typically follows in six to ten weeks depending on how much has to integrate with systems you already run. We would rather cut scope to protect that window than let a launch slide, and we will say so early if the scope you want does not fit it.

What happens after launch?

Do we own the code?

Yes. The repository, the infrastructure and the documentation are yours, and we set them up in your accounts from the start rather than migrating them at the end. You can take the product in-house whenever you want to.
